I love this recipe. It’s really a basic kichari recipe that you can add veggies to or just have plain. Kitchari is a wonderful satisfying- easy to digest food that is considered to be tri-doshic in Ayurveda. (beneficial to all) I found this recipe in the Yoga Journal Magazine few year ago.
Basic Kitchari
3 tablespoons of clarified butter
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
½ teaspoon turmeric
½ teaspoon salt
1 cup yellow Mung beans or red lentils rinsed
1 cup basmati rice rinsed
6 cups of water
In a pot, heat clarified butter over medium heat. Add the cumin and mustard seeds, wait for them to pop. Add everything but the water and simmer for a few minutes (this is the time to add shredded carrots, chopped greens, or another vegetable of your choosing. Add the water and bring to a boil. Turn the heat to low and cover, stir occasionally. Cook until tender about 25 minutes.
This is wonderful all alone as a cleansing fast, or as a side dish with greens such as kale.
